Campanilla del Palmar Chino, Cuerno, Verde from M. Maria de la Luz is produced with and ensamble of Agave salmiana subspecies Crassispina that takes 15-25 years to reach maturity. During fermentation, 40 liters of pulque are added to jumpstart the sugar-yeast interaction. The distillation is done in extremely small batches using a campanilla style still.
The first batch to arrive in the US was produced in July 2023 and the breakdown of agave types is as follows: 40% Chino, 40% Cuerno, and 20% Verde.
Campanilla del Palmar
Campanilla del Palmar is produced by the highly acclaimed Maestra Maria de La Luz Martinez and her two sons Jaime and Manuel Navarro in the community of Palmar Segundo in the state of San Luis Potosi, in Central Mexico. The family has been producing mezcal or destilados de agave using rare and very labor intensive clay pot stills for 8 generations.
The Navarro’s work with 4 different subspecies of Agave salmiana that are locally known as Verde, Cuerno, Chino, and Blanco. For all of their destilados, they only ferment the agave juice, the fibers from the heart of the agave, and pulque, which helps to jump-start the fermentation process.
Unlike the Filipino stills, which have an exit spout in the top chamber of the still, their stills are very different in that the top clay pot chamber (caparote) has a smaller 15-liter clay pot hanging inside it that is used for collecting the condensed spirits. The suspended catchment vessel resembles a little bell, or campanilla, which has historically been referred to as being a Mongolian type of still.
Also unique to this clay pot distillation method, is that the water in the copper condenser dish is hand-ladled to keep it cool throughout both distillations, whereas most Filipino stills that have a constant source flowing through the condenser dish.
Older batches also simply go by the name Campanilla on the label of these bottles.

aroma: fresh bright, jalapeño peppers, briny pickles.. but also musty mushrooms, a sweet dry rub bbq scent. could it be jalapeño cornbread?! ripe fruit, very aromatic. love that!
palette: mmm, super. shape shifting. hot green peppers. little meaty & little minty, this gets sweeter and tastier as I sip into it. dash heat on the tail is nice. long finish. touch of sweet char near the end. would happily sip more of this! very tasty!

Nose is tropical, earthy, green peppers. It’s very rustic, cantaloupe, sweet, earthy, & baked goods. Very complex mezcal that changes the more you drink it. Definitely one of the best Campanilla offerings.

There’s definitely a lot going on with this one. After taking lots of time with it there’s plenty of complexity that I’m sure I’m missing. It’s sort of a chameleon in that way. The verde also really shines in this and i love that. The flavors and aromas are just blissful in the glass. Hands down my favorite out of the handful I’ve had.

430 reviewsI have never had a Mezcal from Maria de la Luz that wasn’t fantastic. This is no exception. In my opinion she is one of the top producers of Mezcal in Mexico. This Mezcal is so perfectly made that it’s in a league of its own. It’s 53% Alcohol but it almost tastes like there’s no alcohol at all. It’s got a mouthfeel that is ethereal, it’s almost like you’re drinking perfumed air. Absolutely magic. The complexity here is insane! This is one of those Mezcals that just keeps changing and changing the longer you sip on it. Right now I’m getting fresh spearmint, cinnamon, cantaloupe, honeydew melon, anise, and salted caramel. Perfection.

Classic salmiana aromas – green pepper, jalapeño, soft sweet nose, green wood from a freshly stripped sapling.
Palate has so much going on: apple sauce and pork chops, green fruit – pear, plum, and apple – maple syrup, cooked agave, honeycomb, and on the backend some of that nopal and roasted poblano, rich wood smoke, with those baking spices. Heat is subdued but still present, a sign of being aged in glass.
Agree with other reviewers, a stellar batch. A ton of complexity and layers of nuance and a never-ending merry-go-round of flavors.

Palate: honey grapefruit, tangy brown sugar almost like Carnitas. Slightly reminds me of this Sonoran chicken marinade I have, earthy, cumin, a bit of honey. Finish is where I finally get the mint people mention, a bit more spiced melon, nice earthy clay as it dissipates.
I love this mezcal. It’s earthy, fruity, and baking spice filled. It’s got a little tang to it. Just an overall lovely bottle and tied with the Cuerno sample I have as just terrific stuff.

I didn’t look at the percentage breakdown of the magueys until after my initial taste and was hit by the chino flavor first, which makes sense because it’s 40% of the ensamble. The chino flavor here is actually very reminiscent of a michoacan style chino, fruity like starburst with some underlying cigar smoke. The cuerno then comes through and brings in almost an americana style flavor profile and is a bit of a smoked meat style flavor profile. End of the taste and lingering flavor is that of the verde, a bit more green and sour. The longer you taste and the longer you sniff, the more it changes. Dynamic is a great word for this mezcal. As I’m writing this review, more of the smoke flavor is poking through– bbq style. This will probably be incredible once it airs out and ages more.

The most unusual mix of flavors. I’m getting gasoline petroleum Listerine Moth balls, all in a great way. And there’s no way you can tell that this is 52%. It’s like there’s no alcohol at all. It’s a mystery. Peppermint, solot, spearmint this is different in a mysterious way. So lingering and complex. after It was in the glass for a bit and aired out some I got something crazy like chicken noodle soup and sotol. It was meaty, brothy, vegetable like and herbal all at the same time. But predominantly spearmint over and over again. This is delicious if you get a chance, try it. I’ve never had a mezcal like it!
