Zignum Anejo is made in Tlacolula de Matamoros, Oaxaca at a large, modern production facility. It’s production is more similar to a tequila than a mezcal.
About this mezcal
Zignum Anejo is aged 18 months in new French oak barrels. This aging gives it strong notes of caramel, vanilla, and wood. The agave used to make this mezcal are not smoked. They are steam-cooked, giving this mezcal a very different flavor.
Zignum Mezcal
Casa Armando Guillermo Prieto (AGP), where Zignum is made, is the largest distillery in Oaxaca. Their main goal is to create and commercialize agave distillates using the most advanced industrial technology. Rather than roasting their agave in pit ovens, their agave is cooked in an industrial autoclave that does not impart the smoke that is found in mezcal made at smaller traditional operations.

40 reviewsHad this in a store in Oaxaca while they were ringing me up for some other purchases. First off Anejo Mezcal at 38% abv? Why? What’s the point? Ok it was smooth and tasted like wood. This is like Don Julio, which was bought by Diagio and uses recycled Jim Beam barrels to make reposado and anejo tequilas. Autoclaves? Probably ‘advanced’ industrial grinders too. There goes the neighborhood.

Don’t go into this one expecting anything like any traditional mezcal or even aged tequila, much more like a Spanish style aged rum, warm, rich, and spicy but still light, with some subtle bright fruit notes. I know this one gets panned by most but I found it really pleasant, but then again I also love rum.

668 reviewsTons of caramel on the nose. Very smooth but not much going on in terms of flavor. Tastes way more like a tequila than a mezcal. There isn’t much info on the bottle except that Zignum contains: Distilled fermented green espadin agave juice. It’s sad that agaves are being harvested to produce this spirit. If you accidentally bought a bottle you might be able to use it to make old fashioneds.
