About this destilado de agave
Caballito Cerrero Azul is made with maguey Azul (Agave Tequilana Blue Weber), which is typically reserved for Tequila. This is produced in Jalisco, which is Tequila-country, but this release is far from a Tequila in how it’s produced. The agave are cooked in a brick steam oven, milled in a double pass mill, fermented in open stainless steel tanks with both wild and proprietary yeast, and distilled in stainless steel and copper.

Caballito Cerrero is a Tequila company founded in 1950 by Don Alfonso Jimenez Rosales. It is considered one of the top Tequila distilleries in the world. They’re committed to producing Tequila the traditional way and that sometimes means they butt heads with the Consejo Regulador del Tequila (CRT). For this reason, they label their traditionally produced Tequilas as Destilado de Agave.

Review #20: Bubble gum and strawberry right out of the glass. Tropical fruits, melon, peach, coconut, vanilla and honey on the mid palate. Light cinnamon and sweet herbs nearing the end. This is such a rich and well made “tequila”. Everything jumps out at you and is so cohesive. I hope to try more from them

The name Caballito Cerrero means the shoeless horse but in context it is the horse that kicks off its shoes. Very fitting for a tequila distillery That bucks the system. We have visited The distillery. It was one of the best adventures getting there! If you have a chance to go it’s a must.
This is one of the best. Technically it is distiliado de agave but really it is GREAT tequila. Yes, made the old fashioned way except with steam instead of smoke and fire.
Aroma, Taste and finish are all really strong and bold, Just like a good Mezcal. Everything else that Johnny reported is accurate. If you can find it, get it.

736 reviewsThe Truth! This is a great reminder of how good tequila could be if approached more in the destilado/mezcal production style. The agave jumps out of the glass on this. Strong aromas of honey, baked goods, and dried herbs. The palate is rich and delicate. Notes of vanilla, fresh peppercorns, bright honey, and summer breeze. This is velvety, yet also light and vivacious. Love it.
