Carne
Maguey Carne (or de Carne) is not scientifically specified. This maguey has long floppy pencas that are totally smooth, with no espinas. In 2017, Graciela of Real Minero first introduced us to this rare maguey. She’d managed to find one and had decided to grow it in her nursery in hopes of getting the seeds and growing more. At that point in time, it hadn’t been used to make mezcal for many many years, if ever.
There are some producers in Santiago Matatlan who call this maguey Liso.
