About this destilado de agave
5 Sentidos Espadin y Sierra Negra de Cuero is an ensamble of maguey Espadin and maguey Sierra Negra. The agaves are cooked together and then mashed by hand with wooden mallets. The mashed agave is then fermented in rawhide fermentation sacks with tepehuaje bark. Once fermented they are double distilled in small clay pot stills. This is produced by young mezcalero Reynaldo Alejandro, who is the son-in-law of famed mezcalero Alberto Martinez.

5 Sentidos (or Cinco Sentidos) is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

Nose: barnyard strawberries, hay, a bit of mint, asphalt, candied citrus
Palate and Finish: mango, oranges, strawberry mint, then it moves into more charred burnt ends, ashy tobacco, finish moves to be adjacent with the nose. Sage, asphalt, strawberries, burnt hay, trailing mint
The hide ferment is evident on the profile here, it adds a rustic and mineral element along with the beautiful fruits I enjoy in Alberto’s batches. Lovely stuff and cool batch to try

736 reviewsBatch OFF04. Aromas of slightly soured orange juice that’s been sitting out on the counter for too long, papaya, mango, and pineapple. Also smells a bit like fresh baked goods, like pastries just out of the oven. The palate mostly matches the nose, but with additional hints of smoked red meats. The sweetness and citrus are a really nice backdrop to the meatier notes on the palate. Long finish.
