5 Sentidos Pechuga de Mole Negro is made by Luis Enrique Juarez in San Augustin Amatengo, Oaxaca. This mezcal is made with maguey Espadin in a copper refrescador still. During the final distillation, Luis added about 15 pounds of his mother Sara’s traditional Mole Negro into the boiling chamber of the still with a turkey breast hung between the boiling chamber and the condensing hat.
5 Sentidos
5 Sentidos (or Cinco Sentidos) is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

3 reviewsThis mezcal is so complex its almost to much but its not 🙂 Palate has some great earth tones that range from spice to fruit to a home cooked meal. Its not for the faint of heart but I highly recommend to try

I sampled this at the 5S tasting room in Oaxaca and really loved it but it’s extremely difficult to track down and I don’t personally love pechugas enough to drop $150+ on them. But this one I think I would. It literally tastes like mole negro and it’s such a fun one to drink. That’s the nose, that’s the flavor profile: mole negro lol. The mole poblano pechuga was a bit too banana forward for me but this one was really a perfect balance.

Aroma – Vegetal, Chicken Bullion, some sweetness like a fresh Banana, Ancho Chiles.
Palate – Chicken upfront, a little brine, some cilantro, slightly sweet. The finish is a little hot, but still pleasant. Compared to Mole Poblano, I like Poblano a little more. This bottle is worth a try if you have some extra mezcal money lying around.
