5 Sentidos Tobala-Sierra Negra-Jabali from Alberto Martinez is produced in the small mountain community of Santa Catarina Albarradas, Oaxaca. The agave are cooked in an underground oven, milled be hand, fermented with tepehuaje bark, and double distilled in a small clay pot still.
5 Sentidos
5 Sentidos (or Cinco Sentidos) is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

I think they also sent part of this batch elsewhere, as it’s available on Madre’s website based in Cali. But this is an incredible clay pot ensamble that takes the flavor profile of the jabali-tobala that is so highly reviewed and throws in the Sierra negra that is also so highly reviewed. A perfect collaboration of these three. The funk of the sierra negra with the soapy, sour jabali, followed by the sweetness and fruitiness of the tobala. I really burned through this bottle quickly on a staycation and only have about 4 oz left.
