About this destilado de agave

Agua del Sol Espadin was produced by Pedro Garcia Sernas in Santiago Matatlan, Oaxaca. The Agave angustifolia were cooked in an underground pit oven, milled by horse drawn tahona, and double distilled in copper.

Agua del Sol

Agua del Sol was created by Felix Hernández Monterrosa and Adriana Correa, who are perhaps most well-known as the owners and operators of the Mezcales CUISH mezcalerias in Oaxaca City. Given the demands of the two mezcalerias, as well as some additional agave projects, the two of them created Agua del Sol with the intention of using to brand to present tiny batches of mezcal to the world.

Batch V/2020
The nose and palate has both vanilla beans, citrus zest and minerals. It’s on the drier side for my liking but still quality.

Batch V/2020. Aromas of chalky minerals, orange peel, lime, and vanilla. The palate is dry with notes of straw, chamomile, and lemon. This is very clean and crisp, a nice espadin.

Nose – Fresh sweet roasted agave. Orange citrus.

Palate – Vanilla bean. Subtle grassiness. Smooth, sweet and smoky to the finish. A nice bit of salt rounding out the aftertaste with a tiny baking soda note. Very clean! All in all this is a quality, textbook espadin sipper, fairly priced at about $60.
