Ánimas Espadin has been produced by a few different mezcaleros in Santiago Matatlán and San Juan del Rio, Oaxaca. The agaves are harvested after 8-10 years and cooked in a conical ground oven, milled with a tahona, fermented in wooden vats, and double distilled in copper pot stills.
Ánimas Mezcal
Mezcal Ánimas is an offering from their master mezcalero to summon Mayahuel, the female deity of maguey. In this ritual the spirits of the agave plant give life to the sacred rabbits that, as a liquid spirit, allow us to enter a mystical world.

20 reviewsThe smell of alcohol is penetrating. The taste is like an explosion, it starts light and bursts, maintaining a strong alcoholic flavor. It cleans your throat and nose. It stings strongly on the tongue.

Nose – Pleasant nose – roasted agave sweetness. Fairly grassy. A light fresh, grapefruit citrus note.
Palate – Great mouth feel – almost a medium viscosity. Some orange zest bitterness. Grassy like the nose and a bit of woodiness too. Balanced flavor throughout – great heat and no burn. For a $40-ish espadin – this is rock solid value. Sips great on its own and I imagine it would make a bad ass cocktail.

Nosefeel improved from the previous batch, maybe left to rest for longer before bottling. It has scents of light, strawberry candy-ish fruit with some spice — exactly the smell of a leather jacket a girlfriend had in 1986. Vegetal qualities, a bit caramel and baked Williams pears, sweet mouthfeel and lightly smoked. Lingering aftertaste that competes with any espadin I have tasted.
