Bozal Jabali has notes of lavender and sage. It has bright green vegetal flavors of celery and parsley with a lingering finish of black pepper.
About this mezcal
Bozal Jabali is made with Maguey Jabali that are cooked in underground pit ovens and then crushed by hand. Once crushed and milled, the agave are fermented in open-air wooden tanks using naturally occurring yeasts. Once fermented, the agave fibers and juices are distilled in small clay pots. This mezcal is produced in the small community of Sola de Vega, Oaxaca.

Mezcal Bozal is a craft, artisan, handmade Mezcal. They celebrate the wild side of the Mezcal world and the wild agave used to produce such rich spirits. They use agave from the steep precarious hillsides of Oaxaca and Guerrero that are indigenous to the region. These varietals produce flavors that are exotically intense, with rich earth tones and savory smokiness. From the heart of the maguey these flavors are traditionally extracted to produce mezcal that is wildly refined.
