About this mezcal
Bozal Madrecuishe is made with Maguey Madrecuishe (Agave Karwinskii) that are cooked in underground pit ovens and then a stone tahona pulled by a horse. Once crushed and milled, the agave are fermented in open-air wooden tanks using naturally occurring yeasts. Once fermented, the agave fibers and juices are distilled in copper pots. This mezcal has aromas of ripe jalepeño, cocoa and floral notes. There are earthy flavors of beet and sweet potato along with minerality and hints of pollen.

Mezcal Bozal is a craft, artisan, handmade Mezcal. They celebrate the wild side of the Mezcal world and the wild agave used to produce such rich spirits. They use agave from the steep precarious hillsides of Oaxaca and Guerrero that are indigenous to the region. These varietals produce flavors that are exotically intense, with rich earth tones and savory smokiness. From the heart of the maguey these flavors are traditionally extracted to produce mezcal that is wildly refined.

Nose: Damp. Peanut shells. Green apple. A smallest hint of feta cheese.
Palate: A bit of black licorice. Rosewater. Veggie sweet but bitter, dry and somewhat sour in the finish.
