About this destilado de agave

Campanilla del Palmar Verde from Jaime Navarro is produced with maguey Verde (Agave salmiana subspecies Crassispina) that takes 18-25 years to reach maturity. During fermentation, 40 liters of pulque are added to jumpstart the sugar-yeast interaction. The distillation is done in extremely small batches using a campanilla style still.

Campanilla del Palmar

Campanilla del Palmar is produced by the highly acclaimed Maestra Maria de La Luz Martinez and her two sons Jaime and Manuel Navarro in the community of Palmar Segundo in the state of San Luis Potosi, in Central Mexico. The family has been producing mezcal or destilados de agave using rare and very labor intensive clay pot stills for 8 generations.

The Navarro’s work with 4 different subspecies of agave Salminana that are locally known as Verde, Cuerno, Chino, and Blanco. For all of their destilados, they only ferment the agave juice, the fibers from the heart of the agave, and pulque, which helps to jump-start the fermentation process.

Unlike the Filipino stills, which have an exit spout in the top chamber of the still, their stills are very different in that the top clay pot chamber (caparote) has a smaller 15-liter clay pot hanging inside it that is used for collecting the condensed spirits. The suspended catchment vessel resembles a little bell, or campanilla, which has historically been referred to as being a Mongolian type of still.

Also unique to this clay pot distillation method, is that the water in the copper condenser dish is hand-ladled to keep it cool throughout both distillations, whereas most Filipino stills that have a constant source flowing through the condenser dish.

Older batches also simply go by the name Campanilla on the label of these bottles.

Nose: Jalapeno, Sweet peppers, citrus, stewed mango and pineapple, a bit of herbs on the back end

Palate and finish: dry citrus rind, lime, a bit of pine, honey jalapeno, a bit more of the stewed fruit on the backend, like mango and pineapple, but more tangy than sweet. Moving into finish is nice baking spices, cinnamon, mint, spiced cocoa.

This is a really good mezcal. Excellent balance of fruits, herbs, and spices. It’s complex yet consistent. I think the clay brought what I and others called “stewed” its slightly earthy and musty. It’s slightly karwinksii like especially on the nose.

Nose: licorice, stewed fruit, clove and baking spices, dusty road

Palate: Mint and herbal flavors, asparagus, anise, sharper heat than the cuerno, short finish, light brown sugar, green plums, and stewed greens.

I prefer the cuerno slightly more from this mezcalero, but still a really solid and quality spirit.

Butterscotch notes all through this one.
Oily, sweet, peppery, and also with some dried banana/fruit notes. Ending has a hot touch, but diminishes quickly. The finish lingers very nicely almost like a sweeter oily coating in the mouth. As mentioned by another review these salmianas def carry a bit more ‘weight’ than the ones I’ve had from Durango (which are also great). Super delightful and I look forward to diving into more mezcal from SLP!

Distilled 3/2023 100 liters 48.9% Sampled on 8/ 2024. Aroma’s out of the bottle on this one. Are soft chili peppers, Jalapeno and sweetness of roasted agave. Just a touch of smoke on this one. And the alcohol is nowhere near what’s the 48.9 percent would lead you to believe. A little bit of spiciness and heat on the aroma on the end as this agave is known for. Flavors followed a suit with some of the strongest jalapeno cream cheese, sotol and spearmint flavors of the bunch. This one’s definitely got some heat and burn on the finish.
But it also fades fairly quickly.
Very woodsy, licorice, Minty and it finishes super clean with a citrus like finish like lime rind or lemon rind. Sort of oily and mouth coating also. Kind of like salty fish oil. But the flavor fades. I think this one would benefit from some time airing out in the bottle and the heat would go away.

I remember I was at Semillon in Cabo the first time I tried Salmiana and I was immediately drawn to how different the flavor profile was. This verde brings me back to that tasting. This is really fantastic stuff. Thicker mouthfeel than many other Durango mezcals I’ve had and the nose is extremely fragrant, funky (like cheese), and vegetal. On the palate, I’m definitely getting some jalapeño, green pepper, mint, pine, and funk. Perfumey aromas and flavor. Almost a bit of artificial grape flavor poking through at times. The smoke is really balanced and there’s essentially no burn on this. Really complex and I’d expect that from how old the plant was at maturity. Love this!

sipped in a veladora glass. Oh my, first nose this is delightful. teleported to SLP (or rather what I imagine based on the various salmaiana’s destilado de agave from there!!)
aroma: fresh cut greens, candied peppers, hint of cinnamon or maple. cooked fruit, banana, date and cantaloupe. I could hang on this aroma just talking and talking before realizing I haven’t yet taken a sip 😀
palette: that went a different direction than I was expecting! more of the woody spice world. minerals, anise, cant quite pinpoint..cooked artichoke? rosemary?? regardless its delightful!
finish: sweet finish, pithy grapefruit, mint.
general notes: a very pleasant heat on this, in the way I want to have it there. Like its pushing the flavors forward letting you know they’re knocking on the door. dare I say Im getting some jabali vibes on this. or how about I say delicious a. salmiana ssp crassispina ‘Verde’ 🙂 !!
