Chinga Quedito Jabali is produced by maestro mezcalero Bezaleel Arellanes in the community of Santa Catarina Minas, Oaxaca. This community is known for their ancestral mezcal, which is distilled in small clay pot stills. The Agave convallis used in this mezcal were cooked in an underground pit oven, milled by hand with mallets, fermented with open air yeasts, and double distilled in the small clay pot stills for which this region of Oaxaca is known.

Batch 003. Aromas of butterscotch, honey, Sugar Daddy candies, and vanilla extract. The palate has similar notes of honey and vanilla. Additional flavor notes of freshly baked glazed donuts, vanilla icing, and coconut shavings. This is really sweet, full, and complex. Jabali’s from Santa Catarina Minas are not super common, but those I’ve tasted have all been really tasty. This one fits that same mold. The clay pots used to make this are not as present on the profile as some of the other mezcals I’ve tasted from this producer, making the agave a bit more present, but yet still soft and delicate. Very nice.
