Creador Coyote is produced by maestro palenquero José Alberto Pablo in San Bernardo Mixtepec, Oaxaca. This small-batch 100% agave expression was cooked in an underground river rock-lined stone oven for 5 days, milled by hand with wood mallets (mazos) in a hollowed tree trunk (canoa), fermented 3-5 days in half-buried 90-liter clay pots, and twice distilled in 60-liter clay pots. The all-clay fermentation and distillation process makes this mezcal unique from most commercially available mezcals.
Batch JACO0524 is José Alberto’s first batch of Coyote. This Agave americana was cultivated and harvested in nearby Sola de Vega, Oaxaca. The plants took 12-14 years to reach maturity.
Creador Agave Spirits
Creador Agave Spirits seeks out independent family producers who have little to no representation outside of their local markets – producers who want to make a transition to full-time production of destilado and need help getting their agave spirits to market.
Creador strives to support palenqueros and their communities by providing autonomy for the producers, as well as fair pricing. The company does not contractually obligate producers, nor negotiate price – what the palenqueros ask, they pay, and the company will advise if they think the spirits are underpriced. Creador profit-shares with the producers, providing transparency into the complex economics of selling spirits into the tiered alcohol-distribution systems prevalent in the US.
Creador translates to “creator” and is an homage to the artisan creators of agave spirits, and a tribute to the creators and makers in us all. De la mano y el corazón – from the hand and the heart.

736 reviewsBatch JAC00524. This smells delightful! Aromas of fresh plums, cherry candies, and plantains. There’s also a bit of clay on the nose, but not overwhelmingly so. The palate is soft with some slight lactic hints. There’s also a strong flavor that is similar to the candy coating on a red tootsie pop. Additional tasting notes of coconut, brown sugar, and raw mint leaves.

Flavors hit on tart cheery, cardamom buns, fresh well water, hint of clay and minerality, faint cigar smoke/tobacco, solid backbone of heat, and a lingering taste of fall harvest tea. Very enjoyable. I can taste some of the leather notes others mention and the brown sugar too. I know Islay scotch was mentioned but maybe something closer to a good California Cab.

I like this one. It delivers in the way I love Coyote to. If you enjoy a little spice you will like that element as well. One of the other reviews mentioned peated scotch and wow does that hit home for me on this one. I think that may actually be a better way to describe the spice I mention. Cool stuff

Taste has more of a subdued clay taste compared to other expressions. To me there is a good duality between the sweetness and savory. I do get some of that classic a. americana notes as well.

The palate has clay, leather, coffee, banana, soft sweet florals, and a gentle ashy wet wood on the finish.
This is some pretty classic clay arroqueno stuff going on. It’s very soft has some delicate notes surrounding everything but it does have a good amount of flavor too. The clay is just a bit too much for my preference here and not my favorite of profiles but it is good nonetheless with the savory flavors.

aroma: cinnamon, spice, soft bark. (arroqueño and sierra negra notes going through my mind) pleasant aromas that draw me in.
palette: soft while flavorful. woody, a fragrant note clove perhaps, citrus lemon kind of a dry finish, grapefruity. hardly any heat.

The clay is present all the way through in this, as it was also fermented in clay pots which is cool as hell. Super soft but complex and NOT thin by any means. Tons of flavor from a bit of tropical fruitiness, tartness like licorice, floral, spice, and leather. Minimal burn. I’d imagine a whole bottle would be quite complex after it aerates a bit. As I’m finishing this review and sipping, also getting some perfume on the nose, some hickory and another flavor that I can’t quite pin down! So good!

Almost no alcohol and a touch of light pine smoke. This has the aroma of a fire.That was rained upon at night.And you wake up in the morning to a crisp cold day, drinking your coffee to warm your hands and wake you up and the fireplace has a certain aroma to it, well this is that aroma. Flavors, pretty much follow the suit. Very soft mouth coating, lovely brown, agave roasted flavors, a touch of that clay pot mineral flavor at the end. And a soft finish of smoke like a great scotch. How I often compare coyote mezcal to Island scotch, I often think the flavor profile is very similar. A coyote mezcal is to an island scotch, one of the things that brought me to mezcal in the first place. This is very satisfying and super easy to drink. Hides a b v well. Great job guys
