Cumbrita Lechuguilla / Sotol from Dolores Gonzales Torres was produced using 50% Agave shrevei and 50% Dasilirion sp in Batopilas, Chihuahua. The agaves and sotol plants were crushed by hand with an ax, fermented in an underground fermentation vat, and distilled in a heritage still called a tren, which is made from a stainless steel pot, an Encino oak ring and cylindrical chamber, and a copper condenser on top.

Cumbrita de la Sierra is a producer-owned agave spirits brand from maestro Dolores González Torres in the state of Chihuahua. Maestro Dolores is well-known for his spirits production. The state of Chihuahua is home to a wide ranch of seasonal weather and temperatures. As such, there will be variability from batch to batch of Cumbrita de la Sierra depending on the season in which it’s made.

Review #142: The nose has earth, chocolate, pine, caramel, and leather.
The palate has peppermint, mint chocolate, green beans, pine, mossy, cream, strawberry, caramel, leather, and some dry earth on the finish.
This is really different from his other stuff. I find his agave bottlings to be on the delicate side and the sotol really dominates and shines through here. As it opens up I get a bit of the sweeter notes from the agave, but overall it’s more chocolate, vegetal, and earthy. I found this to be a pretty fun showcase of a bolder sotol expression backed up with his softer lechuguilla flavors.
