Dainzu Espadin is produced by Don Leoncio Santiago and Doña Octavia, who are both 4th generation producers of two mezcalera families. The agaves are cooked in an underground pit oven, milled by tahona, fermented in wooden tinas, an double distilled in copper pot stills.

Dainzu Mezcal is produced by Don Leoncio Santiago and Doña Octavia in Santiago Matatlan, Oaxaca. Both Don Leoncio and Doña Octavia represent the 4th generation of mezcal producers in their respective families.
