Don Lorenzo Coyote is produced by Armando Hernandez and Alvaro Hernandez at their Mal de Amor in Santiago Matatlan, Oaxaca. According to the brand, this maguey Coyote is a natural hybrid between Tobala and Cuishe. We’ve heard this referred to as a Coyota with other producers. The agaves are traditionally cooked in a pit oven, milled by tahona, fermented with open air yeasts, and double distilled in copper alembic stills.
