Escarabajos Raicilla de la Sierra is made with wild Agave maximiliana, under a sustainable selection of mature plants from two different mountainous areas. The agaves are baked with oak for 3 days in a semi-buried masonry oven. The cooked agave are then fermented with wild mountain yeasts, and then double distilled in copper and steel stills.
