Gusto Historico Cuixito / Espadin from Eusebio Santos was produced in Miahuatlan, Oaxaca. This was made with 70% Cuixito (A. karwinskii sp) and 30% Espadín (A. angustifolia). The agaves are cooked in an underground oven, milled by tahona, fermented with open air yeasts, and double distilled in a copper alembique still. Look for notes of watermelon, sour cherry, strawberry, kiwi, peach, slate, petrichor, saline, white pepper, lavender, and jasmine.

Review #25: strong flavors and aromas of strawberry right from the start, then some vanilla, bright watermelon, pine, ash (but not smoke-y, more of an earthy ash) fresh wet soil, and wet stone.
This has excellent fruitiness balanced by earthiness. This may be closer to a 7-7.5/10, but I’m pushing it to an 8 for now. It lacks intensity and complexity, but the style of flavors worked well for me. Definitely easy sipping
