About this raicilla

Las Perlas Raicilla Chico Aguiar is made with wild maguey Chico Aguiar, which is commonly listed as an Agave rhodacantha, but in this case, it is more likely an unclassified hybrid of Agave rhodacantha and wild Agave angustifolia. The first distillation is done in a small stainless steel pot still. The second distillation is done in wooden Filipino still with a copper top.

Las Perlas de Jalisco

Las Perlas de Jalisco is distilled at Hacienda El Divisadero by 5th generation raicilleros, the Diaz Rubio and Diaz Ramos families. The taberna is located near the village of Las Guásimas, about 30 minutes north of El Tuito, the largest town in the Cabo Corrientes municipality.

I love Raicilla. When I traveled through Jalisco I tasted many different expressions, but this one is so clean and so beautiful I just love it. Somehow Raicilla tastes so much different than all the Agave expressions from every other state in Mexico. Blind tasting Raicilla, you know it right off the bat. This is sour like lemon soda, lime soda. So much freshness like Spearmint, and the slightest bit of cheese. This is a beautiful expression. It’s not my favorite Raicilla of all time but it’s definitely top 10. I need to get back to Jalisco.
