Lechuguilla Parejo Ensamble from 4th generation maestro vinatero Juan Fernández is made in Madera, Chihuahua using 60% wild Dasylirion wheeleri (sotol) and 40% wild maguey Cenizo (agave).
This region is known for its coniferous forests, humid summers, and cold yet dry winters. Agaves and sotols take approximately 15 years to reach maturity. They are roasted together for 3 days in a pit oven, and then crushed using a mechanical shredder. They are fermented for 7 days and then distilled in a stainless steel alembic still.
Look for aromas of warming spices, tropical fruits, and browned butter. Tasting notes include wood, eucalyptus, and pine needles.
Parejo Sotol
Parejo is the term used by a vinatero to describe when a sotol is perfect. They read the ABV of the spirit by passing it from one cuerno to another. They adjust by adding spring water until the perlas form from the center.
Sotol Parejo was founded by Jorge Caldera, who has devoted 13+ years to studying the native spirits of Chihuahua. Throughout that time, he met producers and built friendships. For many years, viñatas were considered illegal by the government. Because of this, Jorge found that a shared struggle existed among the maestros. Unfortunately, their craft was considered taboo.
The goal of Parejo Sotol from the outset was to recapture the historical taste of sotol.

Nose: pie crust, sweet potatoes, subtle baking spices, sticky toffee, all with a sort of underlying grilled vegetable element
Palate: more sweet potato, red apple, sugared pineapple, candied pecans, ginger. Finish is nice cinnamon, brown sugar, a bit charred veggies and peppers.
Love this. It started as a four but as I sipped it felt more and more like a 4.5. I just love the savory and baking spice elements combined with candied fruits or nuts. Good stuff
