Los Ocotales Tobala is produced by maestro mezcalero Adolfo Santiago in San Dionisio Ocotepec, Oaxaca. The agaves are cooked in an underground pit oven, milled by tahona, fermented in pine wood tanks, and double distilled in copper alembic stills.

Los Ocotales Mezcal is co-owned and produced by Adolfo Santiago & Victoria Mendez along with their other family members in San Dionisio Ocotepec, Oaxaca. They are a 3rd generation family of mezcaleros.
