With very few exceptions, Don Celedonio works his homegrown and wild-harvested agaves exclusively during the hot and dry months of March-May, producing around 800 liters annually. His wife, Telésfora, assists in nearly every aspect of production, and oversaw the fermentation and distillation of this 220L batch of Espadín, made in May 2021. The two descend from generations of palenqueros dating back beyond family memory and are proactive guardians of this family tradition in Logoche, Miahuatlán. Composed with a mix of heads, hearts, and tails, this batch of Espadín is extremely expressive of the terruño and highly representative of the quality of craftsmanship for which Logoche and the Aquino family are known.
NETA
NETA is a colloquial word in Mexico that translates to “the real deal” or “the truth”. Since 2012, the brand has worked closely with several small, family producers and a cooperative of twelve palenqueros from the southern valleys and hills of Miahuatlán, Oaxaca. The region has preserved its reputation for producing some of the finest mezcales and agave spirits anywhere in Mexico. The team behind NETA presents a carefully curated selection of extraordinary spirits that would otherwise never be found outside of its place of origin.
A note about NETA labels: The total bottle count written on the front label might be less than the total batch size. Batches may be split between Mexico, Europe, and the US; the handwritten bottle count represents the number of bottles imported into a particular country.

Nose – A mellow sweetness. Butterscotch, baking spices, pencil shavings, some rubber, and a bit of nuttiness like vanilla extract.
Palate – A lot of savoriness to it; salinity with some bittersweetness. Seawater, charcoal, dark chocolate with sea salt sprinkled on top, salted mixed nuts, buttermilk, and some fresh mint and basil.
Finish – Briny and somewhat seafoody. Mussels and oysters, with an earthy minerality like wild mushrooms, and a salty herb, like oregano.
Good! Very savory with some smoke and the smallest bit of initial sweetness. However the overly savoriness surprises me considering this is a Capón. I expected there to be a more riper and sweeter body. Regardless, still fun to sip on!
