Ojo de Dios Odd Hibiscus is produced by maestro Francisco Ortiz, a 3rd generation mezcalero in San Luis del Rio, Oaxaca. The maguey Espadin are cooked in an underground pit oven, milled by a donkey-drawn tahona, naturally fermented in wooden barrels, and double distilled in 250 liter copper pot stills. After distillation, the mezcal is rested with hand-picked hibiscus flowers from the coastal town of Rio Grande, which are dried for 40 days before blending.
