Olla de Miel Anejo is produced by maestro mezcalero Vincente Vega in Santiago Matatlan, Oaxaca. Don Vincente cooks his maguey Espadin in an underground pit oven, mills them by tahona, and ferments using only naturally occurring open air yeasts. Once fermented the maguey are double distilled in a copper alembique still. After distillation, the mezcal is aged for 16 months in American White Oak barrels.
