Olla de Miel Joven is produced by maestro mezcalero Vincente Vega in Santiago Matatlan, Oaxaca. Don Vincente cooks his maguey Espadin in an underground pit oven, mills them by tahona, and ferments using only naturally occurring open air yeasts. Once fermented the maguey are double distilled in a copper alembique still.
