About this mezcal

Paquera Ancestral Espadin with Wagyu was produced by mezcalero Valentin Orozco Lopez in Santiago Matatlan, Oaxaca. The maguey Espadin was harvested after roughly seven years. It was then cooked in an underground pit oven, milled by tahona, and double distilled in a clay pot still. Similar to a Oaxacan pechuga, during the second distillation, the mezcalero used a cut of Yellowstone Tajima Wagyu from the Arrington Ranch in Twin Bridges, Montana. The piece of wagyu was wrapped in twine and suspended in the clay pot still for the second distillation.
