Paquera Espadin with Mango was produced by mezcalero Luis Juárez in San Agustín Amatengo, Ejutla, Oaxaca. The agaves were harvested after about seven years. They were cooked in an underground pit oven, milled by tahona, and double distilled in a copper refrescadera still. As the name would suggest, mango was added to the still during the second distillation.
