Sabelotodo Espadin from Felix Cruz was produced in the community of Santa Catarina Minas, Oaxaca. Felix learned to make mezcal when he started working with another mezcalero in Minas when he was 16 years old. By the time he turned 19 years old, he’d established his own palenque, with 3 wooden fermentation vats, and 2 clay pots for distillation. Eventually, his brothers began making mezcal with him and the palenque expanded, taking on the name Palenque La Tentación.
All of their agave is milled by hand with wooden mallets. They do a “dry ferment” for 10-12 days after milling, and then add well water for further fermentation for 10-15 days. The ferment is distilled in small clay pot stills and brought to proof using the heads and tails of the distillate. The ABV will vary between 47-52% depending on the batch. Batch sizes vary between 50-200 liters.

Sabelotodo began in 2011 as a project to focus on mirco-regions of Mexico, such as Santa Catarina Minas, Campanilla, Ixcatlán, Tuxcacuesco, Barranca, and some other important regions that have been making agave spirits for a very long time. This project is from the same founder as Mezcal Legendario Domingo.
