About this mezcal
Salvación Pechuga is made with agave espadín, which takes between 6-12 years for the agave to mature. Their Pechuga production season is limited to the fall due to the special ingredients needed: honey-pineapples, crab apples, apricots, anise, Castille bananas, apples, cinnamon, almonds, raisins, rice (as a filter) and the breast of a female wild turkey (softer and more flavorful meat than the one of the male turkey) with no skin are used to prepare this amazing mezcal. Salvación’s Pechuga mezcal is their most limited release because it requires incredibly high labor and ingredients, plus a third distillation. This mezcal is balanced with the aroma of citrus, fruits and anise. It is flavorful, smoky with a delicately sweet finish.
Salvacion Mezcal
The agaves used in Salvación Mezcal are harvested by hand and then roasted in an earthen pit at a 150 year old distillery. The roasted agaves are then crushed by a horse-drawn tahona. Salvación Mezcal is marketed as an ultra-premium artisanal mezcal. It is produced and bottled in Oaxaca, Mexico.
