Sol de Oaxaca Mezcal Joven is made using 100% agave Espadin grown for a minimum of 6 years. The harvested agave hearts are cooked in a traditional underground oven for 3 days. After the agaves are cooked they are milled using machinery. The mixture of fiber and juice is loaded into fermentation vats, sometimes as large as 10,000 liters. Fermentation is closely monitored, and when the time is right it is time to distill. The mezcal is double-distilled and then purified before bottling.
Sol de Oaxaca Mezcal
Mezcales de la Raya was founded in 1998 by Don Alejandro Hevia and his sons. The Sol de Oaxaca brand represents his exported mezcal. Sol de Oaxaca mezcal won the silver medal in the 2018 San Francisco World Spirits Competition. The bottle art features the colors of the famous Oaxacan Alebrijes.
