About this sotol

Sotol Parejo Wheeleri from 4th generation maestro vinatero Bienvenido Fernández is produced in Madera, Chihuahua using 100% wild Dasylirion wheeleri.

This region is known for it’s hot summers and mild, dry winters. The sotol in this area take about 15 years to reach maturity. Once harvested they are roasted in a pit oven for 3 days and milled with a mechanical shredder. Fermentation takes about 7 days, and then they are distilled in a stainless steel alembic still.

Look for aromas of orange zest, rosemary, and juniper. Tasting notes include pine sap, maple syrup, and lime pith.

Parejo Sotol

Parejo is the term used by a vinatero to describe when a sotol is perfect. They read the ABV of the spirit by passing it from one cuerno to another. They adjust by adding spring water until the perlas form from the center.

Sotol Parejo was founded by Jorge Caldera, who has devoted 13+ years to studying the native spirits of Chihuahua. Throughout that time, he met producers and built friendships. For many years, viñatas were considered illegal by the government. Because of this, Jorge found that a shared struggle existed among the maestros. Unfortunately, their craft was considered taboo.

The goal of Parejo Sotol from the outset was to recapture the historical taste of sotol.

Batch BF-WHE-03. ABV: 49.78

Nose: wow! I feel like I’m sniffing fresh cut pine, air freshener, pine needles, love Tyler’s natural Vicks note, as it settles I get some citrus underneath, more tangerine. So far this gives me Karwinskii vibes.

Palate and Finish: whoa, this is strange. It’s like bitter orange juice, then camphor, pencil eraser, dish soap, this very weird for me. Almost like scented shampoo. Some menthol. The finish is bitter citrus and more soapy elements.

Curious if others like this. I appreciate it but it’s not really my style. The nose was really nice so I can’t knock it too low.

Crazy aroma.. almost like some basil mint candy. Sipping it has mint as well. Honestly the flavor is a bit weird. It reminds me of eucalyptus balm, like Vicks VapoRub but a less industrial version like Mentisan from Bolivia. Finish has some cooked fruit. From memory, this is quite different from some of the other Whelleri sotols from Bienvenido released under brands like Clande and Sotoleros. Less grassy, more spearmint. It is unique – just not sure how I feel about it given the flavor association. Kinda dig it but think it has a time and place. Batch BF-WHE-02, 49.13% ABV. Fermentation date: 01-2023.
