Mezcal offers its share of subtlety, but I did not get into mezcal for subtlety. I got into mezcal to have my socks ripped off, especially during the holidays, and I will forever associate this Pechuga de Papalote with Christmas, for within it are packed all the flavors of explosive celebration. I picked up the bottle from Alamo City Liquor in San Antonio in 2019. My wife and I found round fruit, fennel, dark berries, pine, eucalyptus, and a quick bite that expands into the herbaceous district of flavortown and lingers like Christmas lights past Valentine’s Day. ¡Salud!

I’m struggling with the burn. I may be putting too much stock in the pechuga magic and the third distillation, but it’s simply hard to drink, and I value ease. After trying it initially, I put it away to calm down, but upon revisitation, it’s still not as fun to sip as the bottle is beautiful. (Note the illustration with the poor lamb hanging mid-quiote.) The flavor is sweet, sour, salty, and unique. The nose delivers bright springtime, and it has a magical water texture. I would love more info on the bottle regarding distillation, mezcalero, etc. We may just need time and counseling, the two of us.
